It all begins at sixteen, on the benches of the hospitality school in Chamalières. After formative experiences in London, in Michelin‑starred restaurants on the Côte d’Azur, in Beaune and Reims, it was a journey through Australia that shaped our vision of cuisine.
We chose to settle in this mill owned by the town of Saint‑Saturnin and closed for eight years to create a place that reflects who we are. The dining room, a true living space, blends vintage tableware inherited from our grandmothers with second‑hand furniture sourced from local reuse centers, creating an atmosphere that is both authentic and warm.

Renovated with care, the former mill blends basalt stone, slate, and natural materials. Outside, the pond and the Cantal countryside create a soothing backdrop. Here, no rooftops stretching to the horizon — only the small road linking Ségur‑les‑Villas to Saint‑Saturnin reminds us that the world still exists. Inside, every detail matters: wooden furniture, mismatched tableware, soft lighting… Nothing is left to chance, yet nothing feels rigid.
Beyond the plate, the Moulin de la Santoire is an invitation to total disconnection. Surrounded by wild meadows, the estate feels like a preserved enclave where time seems to slow to the rhythm of the Cézallier. Here, the silence is broken only by the gentle ripple of the water, a reminder of the rarity of such an isolated refuge. Crossing the threshold means leaving the outside world behind and stepping into a vibrant living space. Second‑hand objects and family heirlooms infuse the room with soul, turning each meal into an intimate moment of sharing. It is in this inhabited setting, carried by the murmur of the Santoire, that our duo’s passion is expressed with sincerity.
